This is my milk pasteurizer. Each afternoon around 4:00 p.m. a sweet, little, sari-clad lady comes by my house. She pours a liter of milk into this container. It then goes directly onto the stove top. It's like a little double boiler. The milk is on the inside and there's water in the outer container. Once it's been over the heat for a while, the water begins to boil. This is my cue to turn off the heat and let the pasteurizer sit for 15-20 minutes untouched and undisturbed. VOILA - pasteurized milk! WOOHOO!
